Meal Services
Family Dinner --- make some special quality time for your family:

A 'Sunday' style dinner prepared and served fresh for the whole family, extended family or just you and your spouse!  I shop, cook, pour the wine and plate the dinner as your family gathers around the table for great food and conversation.  Schedule this service alone or add to a meal plan and repeat once a month or however often you like.

Meal Plans --- meals for busy families, singles or empty nesters:

I grocery shop, prepare the meals in your kitchen and package them in the refrigerator and/or freezer.  My containers are good for reheating in the oven OR the microwave.  You choose the menus so the entire family always gets their favorites and YOU decide how many entrees, how many servings of each and the frequency of your meal plan service.

And when I'm done cooking, your kitchen sparkles, your 'fridge is stocked and your home is filled with an amazing variety of enticing aromas to savor.  Best of all, you never left home, looked for a parking spot or waited in line to enjoy a relaxing and superbly prepared meal for yourself or with your spouse or family.



Party Services
Anniversary Party --- with sit-down service for 2 guests:

I grocery shop, prepare all the food and serve your anniversary dinner individually plated using your china, flatware and crystal.  Dinners are typically 6 courses which includes an 'amuse bouche', an appetizer, a soup, salad or pasta course, the entree, a sidedish and dessert and coffee.

Choose your dinner menu from my Mexican, American, Italian or French menus; I will help you design the perfect menu for your occasion.  This special dinner service for two makes a great anniversary or birthday gift for your spouse, parents, grandparents or friends.

Small Dinner Party --- with sit-down service for 4 to 12 guests:

I grocery shop, prepare all the food and serve your dinner party individually plated using your china, flatware and crystal.  Dinners are typically 5 courses which includes an appetizer, a soup, salad or pasta course, the entree, a sidedish and dessert and coffee.

Choose your dinner menu from my Mexican, American, Italian or French menus; I will help you design the perfect menu for your occasion.  I can alter your menu or suggest substitutions for any type of diet and I am happy to accomodate vegetarian or vegan guests as well.

Buffet Party --- for fifteen to seventy-five guests:

I grocery shop and prepare the food in your kitchen over one to two days depending on the size of the party.  Then, on the day of your event, I finish cooking and setup your buffet with the help of my sous chef and waitstaff as needed.

Chef for the Night can provide all foods including desserts, non-alcoholic beverages, ice, serveware, chafers, plasticware, napkins, disposables, cold and hot cups, coffee, cream, stirrers and sweeteners if desired.  You may also elect to provide some of the non-food items, desserts, coffee and soda yourself; but, you must provide any wine, beer or liquor for the event and hire your own licensed bartender if desired.

Choose your party menu from my Mexican, American, Italian or Chinese/Polynesian menus.  You may also request a "Tasting Menu" of just appetizers from assorted cuisines to be determined; or you may combine two cuisines into one menu.   Again, I will help you design the perfect menu for your occasion.  I can alter your menu or suggest substitutions for any type of diet and I am happy to provide vegetarian or vegan choicess as part of the buffet.

Cooking Instruction
Formal classes --- emphasis on development of culinary skills:

Cooking classes are held in the client's kitchen and I can teach privately or in groups of up to six.  Groups may decide to rotate the kitchen hosting among the students as desired.

Depending on the level and interest of the student(s), I have developed an extensive outline of cooking topics.   Students may pursue these topics in order, from beginner to intermediate or simply purchase a number of classes for the particular topic or topics they are interested in.

There are optional advanced topics as well; I offer these for private instruction or for groups of two in which students learn the essentials of various ethnic cuisines and master some of their finer points.  I offer three such cuisines, American Grill, Regional Mexican cooking, Regional Italian cooking and a short course on baking & pastry.

Informal classes --- emphasis on specific dishes or recipes:

These cooking classes are for groups of six to eight and are essentially dinner parties with hands-on participation.  Students choose from pre-determined 3-course menus that they are interested in learning how to prepare.

The chef does all the shopping and brings the ingredients to the host's kitchen.  Students break into groups for appetizer, main and dessert courses.  Basic instruction on each preparation is given via short lecture and demonstration.

After which all the students begin their food prep with emphasis on 'mis en place', knife skills and cooking, seasoning, plating and garnishing of the finished plates.  The chef goes around and assists each station as needed and answers any questions.  Then everyone gets to enjoy the dinner party they just created and discuss the results with their chef, as well as any possible improvements, changes or substitutions.
